So, the hot skillet makes the bottom crispy, and the steam melts the cheese and softens the dough. Just perfect. 

Make sure you don’t flip the pizza. That’s not how it works. The cheese will stick to the pan. You’ll end up with tomato-y crust and burnt cheese.
